My sycamore wood fish sculpture has a clear natural finish.  Is it a Dolly Varden, a Bull Trout or an Eastern Brook Trout?  Tough to know with a natural wood finish and no added colors.  Regardless, it looks like you could just pan fry it for dinner.
 
I have carved many fish over the years from a variety of woods. Sycamore is my favorite for fish as sycamore grain has an appearance very similar to the scales on a fish, giving the carving a sense of motion.
